This one is so very simple, and perfect for the end of a hot summer day or to finish off a party barbecue.
1 package ready-to-bake refrigerator sugar cookies spread evenly on a cookie sheet. Bake 15-20 minutes at 350 until lightly golden brown. Allow to cool completely.
Spread two 8 ounce containers of your favorite flavored yogurt evenly over the cooled cookie. Cherry vanilla works great with this recipe, but any flavor will do.
Top with two cups of chopped fresh fruit. Favorite combinations are: 1/2 chopped strawberries, 1/2 cup blueberries, 1/2 cup raspberries, 1/2 cup diced banana dipped in orange or lemon juice to stop them from turning brown then drained.
That's it. Let it set in a refrigerator for an hour to firm up, cut and serve. It's low calorie, and low sugar/carbohydrates so even diabetics and dieters can enjoy this tasty treat.
