This bread is very much a snack for me. It is rather easy and quick to make so I don't make large batches. Besides, small batches give me a place to stop eating.
Haazen's Flat Bread
1 1/4 Bread flour
1/2 C warm water 100* - 110*
1 pk yeast
1 tsp salt
1 tsp sugar
olive oil
9 inch cake pan
Mix flour, salt and sugar in a mixing bowl.
Mix yeast and the warm water. Mix it gently so you have no lumps. Let sit for 10 minutes.
Add the water/yeast to the flour mix. Mix very well. Dump out on a lightly floured surface and kneed the dough sprinkling flour lightly until the dough is not sticky to touch. Kneed for about 10 minute until the dough is elastic.
Coat the bottom and sides of a 9 inch cake pan with good olive oil. Roll the dough to a circle just the right size to fit in the pan. Place in pan and paint the top of the bread with olive oil. Poke a few hole in the top with your finger for ascetics. Cover with plastic wrap and let rise for about 30 minutes.
This is the basic bread. Before I cover the bread for rising, I sprinkle coarse sea salt all over it. This makes it a wonderful, 9 inch soft pretzel.
I also at times sprinkle parmesan cheese all over before cover for rising. You can try minced onions, fresh rosemary, garlic, cinnamon & brown sugar. Just about anything that sounds good to you.
Heat oven to 400*. Bake for about 15 to 17 minutes. Watch it close toward the end to get the perfect golden color.
Like I said, whatever I coat on top, I end up eating the whole thing. So be careful.
note: You can use regular flour but bread flour is softer and holds moisture better. Bread flour has many of the additive that make store bought bread so soft and tasty.
