I had some fresh mushrooms in the fridge and needed something to do with them. I usually slice them very thin and fry them in butter until almost crispy. But I decided to try something different and I am very glad I did.
1/2 lb mushrooms cleaned and cut to bite-size pieces 1 C chicken broth 1/2 small onion chopped / about 1/4 c 1 tsp salt 1/2 tsp pepper 1/2 stick butter
1 C milk 3 tbl flour
Combine broth, mushrooms, onion, salt, pepper and butter and simmer until the mushrooms are done, about 30 minutes.
Mix milk and flour together and set aside until the mushrooms are done. Make sure there are no lumps.
Add milk / flour mix to the pot and cook until thickened. Stir continuous like you would gravy.
Dish it up and watch out that you don't bite your fingers if they get in the way.
