This is a very hearty and filling shrimp pizza recipe my folks found long ago and have adapted slightly. The original was all from scratch including the crust.
Ingredients:
1 premade pizza crust, or make your own if you prefer
8 oz asparagus spears, bottoms trimmed off and cut into 1/2 inch pieces.
2 tablespoons extra virgin olive oil
1 clove garlic, minced or crushed through sieve
2 cups (8 ounces) shredded Italian fontina cheese (we use mozzarella )
3/4 pound cooked shrimp, smaller sized ones work better
3 ripe tomatoes, seeded and cut into 1/2 inch slices
1/4 teaspoon fresh ground black pepper
2 tablespoons chopped fresh basil
Fill a small sauce pan half full with water and bring to a boil (enough water to cover all the asparagus). Add asparagus and cook for 2 minutes. Drain and rinse asparagus with cold water. Pat dry to remove excess water and set aside.
Place pizza crust on a pizza pan.
Begin preheating oven to 450 degrees Fahrenheit.
In a small bowl combine the oil and garlic. Brush lightly over the crust, saving half or more to mix with the asparagus.
Toss the asparagus with the remaining olive oil and garlic.
Sprinkle about half the cheese over the crust. Add the shrimp, tomatoes, and asparagus evenly. Add the remaining cheese. Sprinkle pepper on top or just grind some freshly over pizza.
Lower oven temperature to 425 degrees Fahrenheit. Bake the pizza for around 15 minutes. It is done when the cheese begins to brown on top. Remove from oven and sprinkle the fresh basil on top.
You can omit the garlic if you like.
