I made this today when I ran out of a lot of staple items (like milk) to cook with. Tasted like a hot fudge sundae, so I thought I would share.
1/3 cup packed brown sugar 1 egg 1/2 container flavored yogurt (approximately 1/4 cup) 1/3 cup water 1/2 teaspoon vanilla extract 1/4 cup cocoa powder 1/2 teaspoon baking soda 1 cup flour
Preheat oven to 350. Blend first five ingredients together, sift in flour, baking soda and cocoa powder. Stir well. Pour into lightly greased 8" cake pan.
Filling: 1/4 cup confectioners' sugar 1/4 cup flavored yogurt 4 ounces cream cheese, softened 1 egg 1/2 tsp vanilla 1/4 cup finely chopped nuts or oatmeal
Blend confectioners' sugar, yogurt, cream cheese, vanilla and egg until smooth. Pour over muffin batter. Spread evenly but not to the edges. Sprinkle chopped nuts or oatmeal lightly over the top.
Bake at 350 for 24-28 minutes or until top is golden brown and feels softly firm when lightly tapped.
I tried this today with a chocolate Jiffy muffin mix and a strawberry/banana yogurt. Also using lite cream cheese made this very diet-friendly (low sugar, low cholesterol) without compromising flavors.
