Two slightly different versions. Both are equally awesome to eat.
Peanut Butter Cup Bars:
Ingredients:
10 graham crackers
2/3 cup butter, melted
2 cups confectioners' sugar
1 cup crunchy peanut butter
2 cups semisweet chocolate chips
Directions:
1. Line the bottom of a 10x15 inch jellyroll pan with graham crackers. In a medium bowl, cream together the butter, confectioners' sugar and peanut butter until smooth. Spread over the graham crackers, and chill until firm, about 15 minutes.
2. Melt chocolate chips in a bowl over simmering water or in the microwave oven, stirring frequently. Spread over the layer of chilled peanut butter mixture. Refrigerate until firm, then cut into squares. These keep well placed between sheets of waxed paper in an air-tight container in the fridge.
Creamy Peanut Butter Cups:
"A simple but decadent confection that quells the urge to dip your chocolate bar in the peanut butter."
Ingredients:
1 1/2 package chocolate chips, divided
1 cup peanut butter
1/4 teaspoon salt
1/2 cup confectioners' sugar
Directions:
1. Trim 12 paper muffin cup liners to half of their height.
2. Place 1/2 chocolate chips in a microwave safe container. Microwave for 2 minutes, stirring after each minute. Spoon melted chocolate into muffin cups, filling halfway. With a spoon, draw the chocolate up the sides of the cups until evenly coated. Cool in the refrigerator until firm.
3. In a small bowl, mix together peanut butter, confectioners' sugar and salt. divide into the chocolate cups. Melt the remaining chocolate, and spoon over peanut butter. Spread chocolate to edges of cups.
Alternate Directions:
1. Line the bottom of a 9x11 cake dish with wax paper.
2. Place 1/2 the chocolate chips in a microwave safe container. Microwave for 2 minutes, stirring after each minute. Spread melted chocolate over the wax paper. Cool in the refrigerator until firm.
3. In a small bowl, mix together peanut butter, confectioners' sugar and salt. Spread evenly over cooled chocolate bottom.
4. Place the remaining chocolate chips in the microwave safe container and melt as before. Spread over the peanut butter mixture and allow the chocolate to spread down the sides. Cool in refrigerator until firm. Cut into squares.
