Got this on the stove right now Vegetarian, though you can add meat if you have it, just wasn't in the budget for me this week.
1 yellow onion, diced
1 red bell pepper, chopped
1-2 cloves of garlic, minced
2-6 chipotle peppers in adobo, chopped (let your digestive tract be your guide) + ~2 T of sauce
2 15 oz cans of red kidney beans
1 15oz can of black beans
1 15oz can of diced or whole tomatoes
1 15oz can tomato puree
1/2 T cumin
2 t black pepper
1/2 t cayenne/red pepper powder
1 t paprika
1 t oregano
4 t brown sugar
2 t cocoa powder
1/2 t instant coffee
salt to your taste
1/2 t liquid smoke
- Put a large saucepan on medium-low heat and coat the bottom with oil.
- Add the onions to the pan. Don't stir too much. Let them get nice and brown, the darker they are, the more flavor later.
- When the onions are browned add the red pepper and let them cook together for a few minutes.
- Add the chipotles and the adobo sauce and stir together.
- Add all the canned beans and tomato stuff.
- Add all the spices, mix it up well, and let it come to a simmer. Turn the heat down, cover and let it cook till the peppers are soft. Stir it up now and then to make sure the bottom's not cooking too fast and sticking.
- Before you turn the heat off, stir in the liquid smoke.
I like to serve it with a little sour cream or plain yogurt on top and a sprig of cilantro. Or Fritos if I have em.
Feeds 6 - 8 I'd guess... I cook for just myself but that's how many days it takes me to eat it all. ;D
