The Pig 1/2 lb Lean Ground Pig (not to be confused with Ground Hog) 1 1/2 tsp Chili Powder 1/2 tsp Salt 1/4 tsp Paprika 1/4 tsp Cumin 1/4 tsp Onion Powder 1/8 tsp Garlic Powder 1/8 tsp Oregano 1/8 tsp Chipotle 1/8 tsp Black Pepper
Mix all stuff together very well. Cover with plastic wrap and set aside.
The Goo 1 C Tomato Sauce 1 C Chicken Broth 1 tsp Minced Onion 1/2 tsp Garlic Powder 1/2 tsp Basil 1/4 tsp Thyme 1/4 tsp Black Pepper 1/4 tsp White Pepper 1/8 tsp Cheyenne Pepper 1 Bay Leaf
Mix all stuff together. Bring to a simmer. Stir occasionally as you continue with the next steps.
The Rice 1/2 C Dry Rice
Cook the rice as directed.
Brown the pig well into small crumbles. You may need to add a bit of oil to the pan if the Pig is very lean.
Mix the Pig and the Rice together. Put some Pig Rice in a bowl and spoon an some Goo. (don't eat the bay leaf)
This is a bit spicy but not too much. I like a dish that raises my forehead humidity.
You may want to hold back some of the Cheyenne and White Pepper to test first. But remember this, both peppers need to cook for 10 or 15 minutes before you can truly judge how spicy it is.
Be careful to not bite your spoon. This was so good, I chipped a tooth. Glad I was not eating this with my fingers. ;D
